Sharing our passion for local, quality ingredients, we’re excited to partner with Dillon’s Small Batch Distillers to bring you a new range of signature spirits. Whether you’re a cocktail enthusiast or simply appreciate a good mixed drink, our creative collection of Dillon’s liquors deserve a place on your bar cart.

Inspired by our country’s raw, rich land, Canoe partnered with Dillon’s to craft an iconic rye that proudly honours Canada’s history as one of the world’s top whisky producers. Free of flavourings and made from 100% Ontario rye grain, this quality spirit reflects centuries of tradition.

Now, as the temperature plummets, we strongly suggest you master the art of mixing a proper drink. We tapped our longtime head bartender Jeff Sansone for his take on three classic cocktails that never go out of style. Check out the recipes below and get ready to toast to the season!

#1. Old Fashioned

Ingredients

4 clementine segments, muddled
2oz Canoe rye
4 drops of Angostura bitters
Maraschino cherry (we like Luxardo Gourmet maraschino cherries from Italy)

Directions

Muddle the clementine with the bitters in a cocktail shaker. Add ice and rye, and give it a good shake. Pour into a rocks glass. Garnish with a cherry.

#2 Manhattan

Ingredients

2oz Canoe rye
1oz Dillon’s sweet vermouth
4 drops of Angostura bitters
Orange peel for garnish (Jeff says roughly 80% of his guests prefer orange peels, while 20% opt for cherries)

Directions

Shake your rye, vermouth and bitters in a cocktail shaker, and strain into a rocks glass over ice (or opt for a neat Manhattan, if you prefer). Garnish with an orange peel.

#3 Sazerac

Ingredients

2oz Canoe rye
0.25oz Martell cognac
0.25oz brown sugar simple syrup
3 drops of Angostura bitters
0.125oz Dillon’s Maison Selby absinthe
Orange peel for garnish

Directions

First, give your rocks glass an absinthe wash by adding one-eighth of an ounce of absinthe to your glass, swirling it around, and discarding it. Add your rye, cognac, simple syrup and bitters to a cocktail shaker with three large ice cubes and give it a vigorous shake, and pour into your glass. Garnish with an orange peel.
