Expo 67, “Man and His World,” was the pinnacle of Canada’s centennial celebrations and the most successful world’s fair of the 20th century, dazzling over 50 million visitors with its transformative visions of the future. Drawing inspiration from the five Canadian pavilions, Chefs John Horne and Ron McKinlay have mapped out a culinary journey that pays homage to the exuberant festivities that united communities from around the globe.
With roots spanning from Canada’s west coast to its northern territories and Maritime provinces, Chefs John and Ron’s evocative lineup features flavourful homegrown ingredients peppered with fun, carnival-inspired bites. From a salmon egg emulsion inspired by a popular Inuit dish, to the renowned Canadian beef that is our pride and joy, our newest tasting menu celebrates the diversity of Canada’s land, culture and people.
