On October 17, Canoe marked an extraordinary milestone with an unforgettable evening high above the city, celebrating three decades of Canadian dining and hospitality.
Chefs past and present — Michael Bonacini, Anthony Walsh, John Horne, Roderick Tomiczek and Ron McKinlay — reunited to craft a one-night-only, five-course tasting menu that honoured Canoe’s legacy through its people, places and flavours. Each course told a story, reflecting the moments, mentors and ingredients that have shaped the restaurant’s evolution over 30 remarkable years.
From Chef Bonacini’s Timbale featuring pickerel and bay scallop mousse, crab, salmon, lobster sauce and caviar, to Chef Horne’s Butter Tart with Dillon’s rye raisins, black walnut and pawpaw ice cream, every bite paid tribute to the Canoe spirit that Peter Oliver and Michael Bonacini brought to life in 1995. Wines from Burrowing Owl and Cave Spring provided the perfect pairing to an evening filled with storytelling and nostalgia.
Beyond the food, the evening reflected what has defined Canoe since its inception: a dedication to genuine hospitality and exceptional service. From the warmth of each welcome to the precision of every pour, the front-of-house team ensured the experience was as seamless and memorable as the menu itself.
Following dinner, chefs, friends and longtime supporters continued the celebration in the bar, sharing memories, laughter and a deep appreciation for the community that has grown within these walls.
